Hoeve de Bies is a fine-dining restaurant located in an 150 year old farm in Sint-Martens-Voeren (Belgium). They asked us to restyle the farm. This has resulted in an attractive restaurant with a raw edge by preserving the authentic beauty of the farm.
During the restyling we realized an arc-shaped view to the wine room. A sleek facade of blue steel separates the restaurant from the wine room, which has been preserved as much as possible in its authentic state
Maurice uses the environment as a source of inspiration for his kitchen. With regional products and pure ingredients, the Voer region is literally put on the map. Together with Peterhans, for whom sincere contact with every guest is key, they form the heart and face of Hoeve de Bies.
